Home Canning Season Has Arrived, and Food-Safety Experts Say One Common Mistake Is Sending More Home Cooks to the ER Than People Realize

Home canning season is in full swing this month, with late-summer tomatoes, green beans, peppers and the last of the stone fruit going into jars across the country. It’s also the time of year public health agencies see the same preventable mistake resurface: canning low-acid vegetables and meats in a boiling water bath instead of a pressure canner, a shortcut that lets botulism-causing bacteria survive the process without anyone realizing it until much later.

Why This Specific Mistake Is So Dangerous

According to the Centers for Disease Control and Prevention, home-canned low-acid vegetables are the most common cause of botulism outbreaks in the United States. Low-acid foods, a category that covers virtually all fresh vegetables, meats, poultry, seafood and some tomatoes, have a pH above 4.6, which isn’t acidic enough on its own to stop Clostridium botulinum spores from multiplying inside a sealed, oxygen-free jar. “Do not use a boiling water canner for low-acid foods because it will not protect against botulism,” the CDC states in its food-safety guidance. Pressure canning is the only method the agency recommends for these foods, since it’s the only process that reaches the temperature needed to destroy the spores; a boiling water bath tops out at 212 degrees no matter how long it runs, and that ceiling simply isn’t hot enough.

The dangerous part is that botulism-contaminated food usually looks, smells and tastes completely normal. By the time symptoms show up, typically blurred vision, muscle weakness, or trouble swallowing and breathing, the toxin has often progressed far enough that the person needs immediate emergency care, antitoxin treatment and sometimes a ventilator while their nervous system recovers. A pantry project can turn into a hospital admission fast, and it’s almost entirely preventable with the right equipment and process.

The Mistakes That Stack on Top of It

Choosing the wrong canning method isn’t the only issue food-safety researchers are flagging this season. Food Safety News recently rounded up several others that compound the risk: following untested recipes pulled from social media instead of ones validated in a lab, using pressure canners that haven’t been checked or recalibrated in years, reusing jars with chipped rims or warped lids that won’t seal properly, shaving down the recommended processing time to save an afternoon, and skipping the altitude adjustment that canners at higher elevations need to actually hit a safe internal temperature. None of these mistakes on its own guarantees a problem. Stacked together, an old gauge, a rushed process time and a recipe copied from a stranger online, they add up fast, and a canner has no way to taste or smell the difference before the jar goes on the shelf.

Even Tomatoes Aren’t as Simple as They Used to Be

Tomatoes deserve a specific mention here because so many home canners treat them as a safe, high-acid food that can go through a boiling water bath without a second thought. That used to be reliably true, but many modern tomato varieties bred for flavor and yield are less acidic than older varieties, which means a jar of plain canned tomatoes doesn’t automatically meet the acidity threshold that makes boiling water canning safe. Extension guidance now calls for adding a measured amount of bottled lemon juice or citric acid to every jar of home-canned tomatoes, regardless of how acidic the tomato tastes, since taste isn’t a reliable way to measure pH in the kitchen.

What Actually Keeps a Batch Safe

The fix doesn’t require special equipment beyond what canning already calls for, but it does mean setting aside shortcuts a family recipe card might have taught. Extension offices including NC State Extension and the University of Georgia’s National Center for Home Food Preservation both point back to the same source for every recipe and processing time: the USDA’s Complete Guide to Home Canning, tested in a lab rather than passed down informally. That means matching the food to the right method (pressure canning for anything low-acid, boiling water for high-acid foods like most fruits, pickles and jams), checking a pressure canner’s gauge for accuracy before the season starts, replacing any jar with a nick or crack rather than reusing it, and processing for the full time listed for your specific altitude rather than whatever time worked for a grandparent decades ago at a different elevation.

When in Doubt

CDC’s guidance on this is about as direct as public health messaging gets: “When in doubt, throw it out.” A jar that didn’t seal properly, smells off, spurts liquid when opened or has a bulging lid isn’t worth the risk of finding out the hard way. Boiling home-canned low-acid food for 10 minutes before eating it, longer at higher elevations, adds one more layer of protection against a toxin that no amount of reheating on the stovetop can fully undo once it’s already there. It’s a few extra minutes against a mistake that, every canning season, still sends people to the hospital.
